  • Preheat your oven to 350°F (175°C). Line a muffin pan with paper liners or grease the tin with cooking spray.
  • In a Non-Stick Saucepan melt the 2 tbsp of butter, add in the vanilla extract, and the banana extract.
  • Add the butter mixture to a large mixing bowl, add in the 1/2 cup of unsweetened almond milk, the sour cream, and the 3 eggs. Whisk together until the wet ingredients are fully combined.
  • To the same mixing bowl, add in the 2/3 cup of sweetener, the almond flour, cocoa powder, baking powder, and salt. Mix well until you get a smooth batter.
  • Gently fold in the sugar-free chocolate chips into the batter, reserving some to sprinkle on top.
  • Spoon the muffin batter evenly into the prepared muffin cups, filling each cup about 3/4 full.
  • Sprinkle some additional chocolate chips on top of each muffin for an extra chocolatey touch.
  • Bake the muffins in the preheated oven for 20-22 minutes or until a toothpick inserted in the center comes out clean.
  • Remove the muffins from the oven and let them cool for a few minutes before transferring them to a wire rack to cool completely.
