  • Preheat your oven to 375°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat
  • In a medium mixing bowl, whisk together the almond flour, baking powder, baking soda, and salt. Set the dry mixture aside
  • In a pot, melt the butter on low heat, add the vanilla extract, and the stevia (or your preferred sweetener) until nice and caramelized. Let the mixture cool for about 10 minutes.
  • Add in the egg and mix until well combined.
  • Gradually add the dry ingredient mixture into the wet ingredients and mix until a dough form.
  • Fold in the sugar-free chocolate chips until they are evenly distributed throughout the dough.
  • Let the dough refrigerate for 10 to 15 minutes.
  • Using your hands, or a small scoop form small balls of cookie dough and place them onto the prepared baking sheet, leaving some space between each cookie
  • Bake the cookies in the preheated oven for about 10-12 minutes or until the edges turn golden brown.
  • Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack or plate.
