Preheat your oven to 375°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat
In a medium mixing bowl, whisk together the almond flour, baking powder, baking soda, and salt. Set the dry mixture aside
In a pot, melt the butter on low heat, add the vanilla extract, and the stevia (or your preferred sweetener) until nice and caramelized. Let the mixture cool for about 10 minutes.
Add in the egg and mix until well combined.
Gradually add the dry ingredient mixture into the wet ingredients and mix until a dough form.
Fold in the sugar-free chocolate chips until they are evenly distributed throughout the dough.
Let the dough refrigerate for 10 to 15 minutes.
Using your hands, or a small scoop form small balls of cookie dough and place them onto the prepared baking sheet, leaving some space between each cookie
Bake the cookies in the preheated oven for about 10-12 minutes or until the edges turn golden brown.
Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack or plate.
