Allow the butter to melt. Once hot, place the salmon fillets in the skillet, flesh-side down if skin-on. Cook for 3-4 minutes on each side or until the salmon is golden and cooked to your desired doneness. Remove the salmon from the skillet and set it aside.
  • Make the Sauce: In the same skillet, reduce the heat to medium-low and add the butter. Let it melt, then add the chopped onions, and the minced garlic and cook for about 30 seconds until fragrant. Deglaze the pan with the chicken broth. Stir in the chopped sun-dried tomatoes and cook for another minute. Pour in the heavy cream and stir to combine. Allow the mixture to come to a gentle simmer. Add in the parmesan cheese.
