Breakfast is one of my favorite meals of the day. This Delicious Egg Omelette Tortilla Wrap definitely hits the spot. The combination of the Eggs, vegetables, bacon, cheese, salsa, and hot sauce. Makes a truly delicious combination. I like to eat this for breakfast at least once per week.

  • Beat the eggs: In a bowl, beat the eggs and season with salt and pepper.
  • Sauté Vegetables: In a non-stick skillet, spray the pan with a olive oil spray, and melt the butter over medium heat. Add in the minced garlic, the diced bell peppers and spinach, sautéing until they are softened.
  • Cook the Omelette: Pour the beaten eggs over the sautéed vegetables in the skillet. Allow the eggs to set slightly at the edges, and then gently push them toward the center, letting the uncooked eggs flow to the edges. Cook for 2 minutes
  • Add the bacon and tortilla: Once the omelette is mostly set but still slightly runny on top, add the bacon slices on top. Next place the low carb tortilla on top and cook for 1 minute.
  • Flip the wrap: Once the omelette is set, carefully flip over with your spatula.
  • Add in the fillings: Add in the cheese, salsa, and hot sauce, or your desired fillings.
  • Fold the wrap: Carefully fold the omelette in half, like a taco, and add a little butter on the tortilla, and flip again using your spatula, ensuring to cook both sides of the wrap evenly.
