  • Preheat the Oven: Preheat your oven to 350°F (176°C). Lightly grease a baking dish or line it with parchment paper.
  • Prepare the Chicken: Cut the chicken breasts into bite-sized cubes. Pour 2 tbsp of the olive oil onto the chicken. Mix up your seasonings in a small cup or bowl, and season chicken cubes with the salt, pepper, oregano, and garlic powder. Toss to coat chicken evenly.
  • Bake the Chicken: Bake the chicken in the preheated over for 20 minutes, or until the chicken is cooked through.
  • Make the Cream Cheese Mixture: Prepare a skillet. In a large skillet, heat the butter over medium-high heat. Once the butter is melted, whisk in the almond flour. Add in the salt, pepper, garlic powder, and crushed red peppers. Add in the chicken broth and continue to whisk. Next break up the cream cheese into large cubes, and gradually add it to the mixture. Allow it to melt.
  • Prepare the broccoli: Remove the cooked chicken from the stove, add the prepared broccoli florets on top of the chicken, pour the remaining 1 tbsp of olive oil on the broccoli florets, and season with some salt, and garlic powder.
  • Add back into the stove: Bake the chicken and broccoli for an additional 15 minutes on 350°F.
  • Add the cream cheese mixture: Remove the chicken and broccoli from the stove and pour the cream cheese sauce over the dish. Mix everything together well, and top with parmesan cheese.
  • Bake: Add back into the stove for an additional 5 minutes, until everything is warmed thoroughly.
  • Garnish and Serve: Remove the dish from the oven and let it cool slightly. (Optional)Garnish with freshly chopped parsley before serving.
  • Serve & Enjoy: Serve the Easy Cream Cheese Chicken with your favorite sides, such as steamed vegetables, cauliflower rice, or a fresh salad.
