  • Prepare the Chicken: Pat the chicken leg quarters dry with paper towels. Place them in a large bowl or on a baking sheet.
  • Season the Chicken: Pour the olive oil over the prepared chicken and rub it into the skin on both sides. Squeeze half of the lemon juice evenly over the chicken. Next evenly sprinkle the baking powder over the chicken. Next, in a small bowl, mix the garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub the seasoning mixture all over the chicken leg quarters, making sure they are evenly coated.
  • Bake the Chicken: Arrange the seasoned chicken leg quarters on a baking sheet or in a baking dish. Bake in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy and golden brown. You can check the temperature with a meat thermometer inserted into the thickest part of the meat, without touching the bone.
